Food and beverage quality control
Assays which measure antioxidants in food are crucial to food quality control.
Antioxidant compounds in the food and drink we consume are vital for the reduction of ROS in our bodies. Vitamin C, resveratrol, gallic acid, and quercetin, among others, are found naturally in fruits and vegetables. Being able to quantify the antioxidant potential of these foods can have a positive effect on our health and wellbeing. Assays such as ORAC and the cellular antioxidant assay (CAA) have been developed to aid this.
Using UV-visible scanning techniques, it is possible to detect the unique fingerprint spectral curve of beverages such as distilled spirits, which is impossible to replicate in counterfeit or diluted spirits. As well as being able to authenticate the distilled spirit, this measurement can also be used to check quality.
